If you love roast chicken, give Maggie Beer’s version a try! It contains one of Maggie’s favourite ingredients – verjuice. Made from unfermented grapes, verjuice is a gentle acidulant that adds a bite of flavour. Step 1. Remove the chook from the fridge approximately 1 hour prior to roasting, to bring it to room temperature. Preheat oven to 220°C.
Step 2. Place half a lemon and the sprig of rosemary inside the cavity of the chicken. Place the chicken in a large baking dish and the garlic cloves in the base around it. Rub olive oil over the chicken and sprinkle with sea salt. Cover the breast with foil, tucking the foil under the wings. This is to ensure breast meat is protected from high temperatures. Place in the oven.
Step 3. After 30 minutes, remove the foil and pour over the Verjuice. Reduce the heat to 180°C and cook the chicken for a further 30 minutes.
Step 4. Remove the chicken from the oven and rest, breast side down, for 20 minutes.
Step 5. Turn the chicken over and place on a platter to serve.
TIP: If you have a steam oven you can give the chook a burst of steam at 20 minutes, 40 minutes and 60 minutes. This will make the skin crispier and the meat even more moist.
